A grade frozen bonito is widely used in cost‑sensitive industrial applications where visual appearance is not critical:
Canning – Scale loss, moderate belly softening, and brownish gills are acceptable because the fish is cooked in oil, brine, or sauce, and the final product appears as chunks or flakes. Defects that are not acceptable: ammonia odor, mushy texture, or black slimy gills.
Surimi / fish ball production – Grinding eliminates all surface defects. Only strong off‑odors (ammonia) or complete belly disintegration would cause rejection.
Deep‑frying / pan‑frying – Coating with flour or batter masks scale loss, minor bruising, and discoloration. The fish must be free from ammonia odor and should not disintegrate during cooking.
Fishmeal / pet food – Any A grade bonito that fails the above sensory checks (e.g., moderate ammonia odor, excessive belly softening) can still be diverted to fishmeal or pet food, as heat processing and grinding will render it safe and usable.
