After thawing: (1) Eyes – bright, convex, clear. (2) Gills – deep red, not brown. (3) Belly press – springs back instantly. (4) Scales – tight, no bare patches. (5) Odor – fresh sea smell, no ammonia. If any fails, reject or claim compensation.

Batch‑specific certificates from ISO 17025 labs must show: (1) K‑value ≤20% (freshness); (2) TVB‑N ≤25‑35 mg/100g (spoilage); (3) Histamine – EU ≤100 mg/kg (mean), US ≤35 ppm; (4) TPC ≤5×10⁵ CFU/g. These prove AAA is not just a marketing term.
