sea Frozen Opah

Sea Frozen Opah (Lampris guttatus), also known as moonfish, is a highly distinctive deep‑sea species found in tropical and temperate waters worldwide, often caught at depths of 200 to 500 metres. Unlike most fish, opah is partially warm‑blooded, a trait that gives its muscles a unique marbling and an exceptionally tender, buttery texture. Our opah is harvested using longline or sustainable mid‑water trawl methods in pristine offshore grounds, and immediately after the catch, the fish receive an instant deep‑freezing treatment directly onboard the vessels. This timely processing – often within minutes of landing – perfectly locks up the just‑caught freshness and preserves the original meat texture without any loss of moisture or natural juices. The rapid freezing forms microscopic ice crystals that prevent cell wall damage, ensuring that the flesh remains plump, succulent, and vibrant in colour – ranging from pale pink to deep orange‑red, depending on the individual fish. The flavour is smooth, clean, and mildly savory with a hint of sweetness, reminiscent of tuna but more delicate.

Nutritionally, opah is a rich source of high‑quality complete protein (approximately 18–22% by weight) and contains significant levels of long‑chain omega‑3 fatty acids (EPA and DHA), which support heart and brain health. It also provides essential minerals such as selenium, phosphorus, and potassium, along with vitamins B12 and D. The moderate fat content (around 8–10%) gives the flesh a satisfying mouthfeel, making it versatile for both dry‑heat and moist‑heat cooking. Our sea frozen opah is available in various forms: whole gutted (head‑on or head‑off), skin‑on fillets, skin‑off boneless fillets, and portion‑cut steaks. Standard packing includes 5kg, 10kg, or 20kg cartons with vacuum‑sealed inner bags or interleaved tissue, and optional glaze ratios are available. With a shelf life of 24 months at –18°C, the product offers steady quality and consistent supply for international wholesale and catering businesses. Our processing facilities are HACCP‑certified and comply with EU and FDA import regulations, with full traceability from catch to container. This premium seafood item adapts beautifully to grilling, pan‑searing, baking, broiling, or even serving raw in ceviche and sashimi (after proper parasite control), making it a highly sought‑after choice for fine dining, high‑end retail, and gourmet foodservice.

FAQ

FAQ

Why choose us

01.What is the typical size and weight range of whole opah?

Whole opah usually ranges from 5 kg to 20 kg, with occasional specimens up to 30 kg. We offer grading by weight intervals (e.g., 5–8kg, 8–12kg, 12–16kg, 16–20kg) to meet your specific requirements.

02.How should the frozen opah be thawed for best results?

Thaw slowly under refrigeration (0–4°C) for 12–24 hours, depending on thickness. For quick thawing, keep the vacuum‑sealed pack in cold running water for 1–2 hours. Avoid room‑temperature thawing or microwave use, as these can cause uneven texture and loss of juices.

03.Is opah suitable for sushi or sashimi preparation?

Yes, its firm yet tender flesh and mild flavour are excellent for raw dishes. However, to ensure parasite safety, the fish must be frozen at –20°C or below for at least 24 hours prior to raw consumption. Our standard product is not specifically labelled as sushi‑grade unless requested and certified accordingly.

04.What is the minimum order quantity for a trial shipment?

For trial orders, we accept quantities starting from 100 kg (mixed sizes or forms). For regular container shipments, the standard MOQ is one 20‑foot reefer (approximately 10–12 metric tons).

05.Does the opah skin need to be removed before cooking?

The skin is edible and becomes crispy when seared or grilled. Many chefs prefer to score the skin for better heat penetration. However, we offer both skin‑on and skin‑off fillets to suit different preparations.

06.Are there any allergens or additives in the product?

The product contains only pure opah – no additives, preservatives, or gluten. It is a natural seafood product; individuals with fish allergies should avoid consumption.
