Product Details

IQF Spotted Mackerel
IQF Spotted Mackerel features individually quick-frozen technology, ensuring each fish stands alone without clumping. This allows you to take exactly the number you need and return the rest to the freezer without waste. The ultra-rapid freezing process forms microscopic ice crystals, preserving cell structure for exceptional texture and moisture retention when cooked. Each mackerel is pre-rigor processed, then frozen in minutes to lock in briny freshness and natural oils. Perfect for food service operations requiring precise portion control or home cooks who want convenience without repeated thawing. IQF mackerel works beautifully for grilling, broiling, or steaming straight from frozen. Packed in bulk 5 kg poly bags or 1 kg stand-up pouches. No double freezing, no binder additives. Simply remove desired portions, rinse under cold water, and prepare. IQF – flexibility at its finest.

FAQ

Q: Why does frozen Spanish mackerel sometimes release a lot of pinkish liquid during thawing, and does that indicate quality loss?
A: That pinkish exudate is myoglobin and other sarcoplasmic proteins that have leached out due to ice crystal damage. A small amount (under 5% of weight) is normal; excessive amounts (over 10%) indicate slow freezing or repeated temperature abuse. This loss directly correlates with reduced juiciness and flavor intensity. If the liquid is cloudy and has a strong odor, the fish is past its prime.
Q: Is it safe to mix thawed Spanish mackerel with other seafood in the refrigerator while they are still partially frozen?
A: No. Partially frozen fish can contaminate adjacent items as thaw drip contains bacteria and enzymes. Always thaw Spanish mackerel in a separate, leak-proof container placed below other foods to prevent cross-contamination. If you need to combine them for a dish, thaw each separately and mix only when all are fully thawed and drained.
Q: Does freezing Spanish mackerel make it more difficult to remove small pin bones, or does it help?
A: Freezing actually makes pin bones easier to locate and remove because the flesh firms up slightly, but the bones themselves become brittle and may break during removal. The best practice is to remove all visible bones before freezing; any missed bones are more noticeable in the thawed product due to slight textural separation around them. Thawed fillets should be bone-checked again before cooking.
