It is not assembled by strict size or colour matching. Instead, it is the default output of a processing line that applies a single rule: discard only those pieces that fail a safety and wholeness check. This makes A-grade the most direct link between the harvest bed and the factory recipe, delivering clean, whole, uncooked clam meat at the lowest achievable per-kilo cost for the edible portion.

     The value of this grade lies in what it deliberately omits. By stopping at the removal of damaged or contaminated pieces, the process avoids the manual or optical sorting steps that would classify meats by weight, mantle symmetry, or visceral pigmentation. Those steps add labour, reduce throughput, and leave behind a fraction of product that must be sold into a different specification. Eliminating them recovers nearly the entire sound yield of a cooked or raw shucking line, and the cost saved is reflected directly in the invoice price.
