     After landing, the fish are rushed to our onshore freezing plant, where they are carefully sorted, sized, and then frozen in a controlled environment. This gives us the ability to perform detailed quality checks and offer customized prep work – such as removing gills and guts – before freezing. The striped bonito is a sleek, tireless swimmer found across the Indo‑Pacific's tropical and subtropical waters. Its most noticeable features are the 6–7 dark, diagonal stripes running over a shimmering blue‑grey back, contrasting with a silver belly. Growing to 50–80 cm and 2–5 kg on average (with occasional specimens over 1 m), it is a predator that feeds on small fish, squid, and crustaceans. Lacking a swim bladder, it must keep moving constantly. The flesh is firm, deep red, and moderately oily, providing a clean, savoury taste that is bolder than mackerel yet gentler than true bonito. It is a coastal pelagic species that typically inhabits surface waters at depths of 1 to 30 meters, with an optimal temperature range of 13.5°C to 23°C.
