01.Is brownish or greenish discolouration on the belly safe?
Yes, it is usually natural oxidation of the dark muscle layer (rich in fat). As long as the fish smells fresh, has firm flesh, and clear eyes (if whole), it is safe. You can trim off heavily discoloured areas for appearance, but it does not affect edibility.
02.Can frozen sardines be used for making fish paste (surimi)?
They can, but sardines have high fat and dark muscle, which produce a darker and softer surimi compared to white‑fleshed fish. Mixed with other species, they are sometimes used, but pure sardine surimi is less common due to flavour and colour.
03.Should I remove heads and tails before freezing?
If you plan to use them for soups, stocks, or fish cakes, you can freeze them whole. For quick pan‑frying or grilling, it is more convenient to remove heads and tails after thawing. There is no quality advantage to removing them before freezing, except for saving freezer space.
04.Can I smoke frozen‑thawed sardines?
Yes. Thaw completely, pat dry, and brine them (in salt and sugar solution) for 1–2 hours before hot‑smoking. The texture holds up well, and the fat content makes them flavourful. Do not cold‑smoke home‑thawed sardines, as parasite risks remain unless commercially super‑frozen.
