Sourced from clean ocean waters (such as the South China Sea or the Pacific Ocean), these fish are rapidly frozen at sea or on land to preserve their freshness and nutritional value.
Appearance:
The fish has an elongated, fusiform body with a metallic blue-green back and silvery-white belly. A distinct lateral line runs along its side. They are typically sold whole, often gutted and gilled .
Texture & Flavor:
It is an oily fish with a moderately firm, flaky flesh. Its flavor is mild, slightly sweet, and subtly briny, often compared to mackerel
