Products Description

Blue Mussel
Our Blue Mussel (Mytilus edulis) is a cold-water bivalve renowned for its distinctive deep blue-black shell and sweet, tender meat. Harvested from wild intertidal beds and sustainable rope-grown farms in the cold, nutrient-rich waters of the North Atlantic – including Maine (USA), Prince Edward Island (Canada), and the Shetland Isles (UK) – each mussel is hand-gathered or mechanically harvested using low-impact methods. The shells display a striking iridescent blue hue with fan-like ridges, and the meat ranges from creamy white to rich apricot orange, depending on gender and season. Live blue mussels are delivered with tightly closed shells or those that close when tapped, ensuring absolute freshness. When steamed or simmered in broth, the meat releases a delicate, sweet brine with subtle mineral notes, free from sand or grit thanks to our 24-hour seawater purification process. Each kilogram contains 40–60 medium-sized mussels (40–55 mm shell length). Packed in breathable mesh sacks or eco-friendly waxed cartons with gel ice, shelf life 6–8 days at 0–4°C. Nutritionally, blue mussels provide 17g protein, 2g fat, 280mg omega-3s, and exceptional levels of zinc and iodine per 100g serving. Perfect for classic moules-frites, Thai coconut curries, or beer-steamed appetizers. MSC-certified sustainable. Available for chilled air-freight worldwide. Wholesale and retail packaging options.

FAQ

Q: Can frozen mussels be eaten raw after thawing?
A: Freezing shellfish kills them, making them unsafe to eat without cooking them after they thaw. Frozen mussels should always be thoroughly cooked before consumption. Eating raw or undercooked shellfish can pose health risks, especially from bacteria like Vibrio.
Q: What is the difference between IQF (Individually Quick Frozen) and block-frozen mussels?
A: IQF mussels are frozen individually, which allows them to remain loose and be easily portioned. They can often be cooked directly from frozen. Block-frozen mussels are frozen together in a solid block, which may require thawing before cooking and can lead to more moisture loss and texture damage due to larger ice crystals.
Q: How does the freezing process affect the nutritional value of mussels?
A: The amount of lipids, ash content, and fatty acid profile of mussel meat are generally not changed during frozen storage. However, protein content can increase due to water loss from the mussel meat during storage. Fast freezing followed by slow thawing can help preserve moisture and texture.
