Ice glaze percentage – many mixes have a protective ice coating (up to 10–20% added weight). Weigh a portion, thaw it, and drain well – then weigh again. If the drained weight is more than 20% less, you've bought a high‑water product. Premium mixes will state "net drained weight" on the label. For stir‑fries, high‑water mixes are a disaster – they flood the pan.

There's no fixed standard, which is the catch. A basic mix might be just shrimp + squid rings + mussel meat. A deluxe mix adds scallop pieces and octopus chunks. A budget mix often bulks up with surimi (imitation crab sticks) cut into chunks – which are actually cooked fish paste, not seafood meat. Always read the fine print: ingredients are listed in descending order by weight. If "surimi (fish, starch, sugar)" appears near the top, you're buying a filler‑heavy product. Look for mixes where shrimp is listed first.

03.How should I thaw a seafood mix to keep shrimp plump and squid tender at the same time?

The temperature shock matters. Refrigerator thaw (overnight, 8–10 hours) is best – spread the mix on a wire rack over a tray to allow air circulation; this prevents the bottom layer from sitting in drip water, which makes the squid mushy and shrimp flavourless. For a quick thaw: place the sealed bag in cold running water for 10–12 minutes – but stop the moment the pieces are flexible, not fully soft. Over‑thawing breaks down the squid fibres. Never leave it at room temperature – the small pieces warm up too fast.
