FAQ

frozen seafood

01.What exactly is a "squid tube skin on" – and why would I choose it over peeled tubes?

It's the main body (mantle) of the squid, cleaned of innards and cartilage, but with the outer pigmented membrane still attached. This skin is rich in collagen and natural umami compounds. Chefs often prefer it for grilling or roasting – the skin crisps up beautifully and adds a deeper, brinier flavour. It also helps the tube hold its shape better during cooking, making it ideal for stuffing or slicing into thick medallions.

02.Can I eat the skin, or do I have to remove it before cooking?

Absolutely you can eat it – it's entirely edible and has a pleasant, slightly chewy texture when cooked properly. In many Mediterranean and Asian dishes, the skin is left on for its visual appeal and flavour. However, some people find it tough or bitter (especially in larger squid). If you prefer a milder taste, you can peel it off after thawing – but note that once cooked, the skin becomes less removable and blends into the dish.

03.How do I remove the skin if I change my mind after thawing – and does it come off easily?

The skin loosens as the tube thaws. The easiest way: after complete thawing, run your thumb under cold water and gently push along the edge – it should peel away in large sheets. If it sticks, dip the tube in boiling water for 10 seconds, then immediately rinse in cold water – the skin will curl up and slip off with a light rub. A pinch of coarse salt helps grip the slippery surface. Never force‑peel while frozen – you'll tear the flesh.

04.Why does the skin turn from purple‑brown to a greyish colour after freezing – is that normal?

Yes, that's natural. The skin contains pigments (astaxanthin and melanin) that oxidise slightly during freezing, causing a dulling of colour. Once thawed and exposed to air, it may even develop a faint reddish or greenish iridescence – that's perfectly safe and not a sign of spoilage. The colour will revive and darken again when seared or grilled. Only discard if the skin appears blackened, slimy, or has an off‑odour.
