Frozen Redtail Scad
Frozen Redtail Scad, scientifically known as Decapterus kurroides, is a sleek, fast-swimming fish found throughout the Indo-West Pacific region-from East Africa and the Red Sea across to Southeast Asia, Japan, and down to northern Australia . It gets its name from the distinctive reddish tinge on its forked tail, which sets it apart from other scad species .
The fish has a streamlined, spindle-shaped body with a bluish-green back fading to silvery white on the belly. A narrow yellow stripe runs down the flank, and the lateral line is marked with small bony scutes (scales) . Most individuals caught for market range between 20 and 30 centimetres in length, though they can grow up to 45 centimetres .
Our Redtail Scad is wild-caught using light purse seine methods-fishermen use lights at night to attract the schooling fish, a technique that takes advantage of their natural behaviour . Once aboard, the catch is processed quickly and frozen to preserve quality.
