It is not recommended to cook frozen cephalopods directly. They should be thawed scientifically first. Direct cooking can easily result in the outside being cooked while the inside remains raw, leading to a tough texture and even food safety risks.
While some thin slices or small pieces of cephalopods (such as squid tentacles or small octopus legs) can be cooked quickly without thawing in certain recipes, this requires extremely precise control of heat and time; otherwise, they will lose their unique tender texture.
Why is direct cooking not advisable?
Uneven heating, resulting in a cooked outside and frozen inside.
Cephalopod muscles are dense, and the core temperature is extremely low when frozen. If cooked directly, the surface will quickly cook or even caramelize, while the inside remains frozen, resulting in a texture that is hard in one section and soft in the other.
This problem is especially pronounced in thicker parts such as whole octopuses and large squid tubes.
Protein denaturation is accelerated, resulting in tougher meat.
High-temperature rapid cooking causes surface proteins to contract and coagulate rapidly, locking in internal moisture and preventing even release. This leads to fiber breakage, poor chewiness, and a texture like rubber bands.
It affects flavor absorption and integration.
Unthawed ingredients have difficulty absorbing seasonings, rendering marinating ineffective. They also struggle to absorb color and sauce during cooking, resulting in a bland taste.
Safety risks exist.
The melting of ice crystals on the surface of frozen seafood forms a water film, which may affect the effectiveness of high-temperature sterilization. If the center is not fully heated, there is a risk of residual pathogenic bacteria (such as Vibrio parahaemolyticus).
Exceptions to "No Thawing Required" Direct Cooking:
Under the following specific conditions, the thawing step can be skipped:
Small-shaped ingredients: such as squid tentacles, small octopus legs, and cut squid rings.
High-temperature rapid cooking methods: such as teppanyaki, stir-frying over high heat, and grilling.
Adjust cooking parameters:
Extend heating time by approximately 30%–50%
Preheat over medium heat initially to avoid burning the outside and freezing the inside
Wipe away any surface ice before cooking to prevent oil splattering and cooling.
