How to Preserve the Freshness of Frozen Shellfish?

The key to maintaining the freshness of frozen shellfish lies in constant freezing at -18℃ or below, airtight sealing to prevent oxidation, and portioning to avoid repeated thawing. Combining quick-freezing technology with scientific management can effectively lock in flavor and texture.

 

1. Pre-treatment: Clean and drain, portion as needed. Before freezing, shellfish must be thoroughly cleaned, removing sand and impurities (such as scallops and clams). Drain well before freezing to prevent ice crystals from encasing impurities and affecting quality.

Package into single servings using food-grade airtight bags or containers. Remove air and seal to prevent freezing damage and oxidation. 50–100ml packets are recommended for easy access.

 

2. Freezing Temperature: Stable -18℃ is the Golden Standard. The freezing temperature should be consistently maintained at -18℃ or lower. This temperature effectively inhibits microbial growth, slows down fat oxidation, and prevents protein denaturation.

Commercially, shellfish are rapidly frozen through a -35℃ freezing tunnel, quickly passing through the "maximum ice crystal formation zone" to ensure even water crystallization within the cells, reducing tissue damage and maintaining a firm, chewy texture after thawing. While home freezers cannot achieve this speed, shellfish can be laid flat and flash-frozen for 1 hour before bagging to simulate the initial flash-freezing effect.

 

3. Packaging Method: Sealed + Light Protection, Vacuum Preferred. Ordinary sealing can easily lead to surface oxidation and drying. Vacuum packaging or airtight bags are recommended to maximize air isolation and extend shelf life by more than 3 times.

High-fat shellfish (such as some scallops) are more prone to oxidation and require special attention to sealing and light protection.
