After thawing, perform a simple freshness check using your senses:
Smell: Fresh thawed chub mackerel should have a mild, ocean‑like or slightly briny odour. A strong ammoniacal, sour, or putrid smell indicates spoilage.
Appearance: The flesh should be moist and glossy, with a natural reddish‑brown to pinkish colour. If it looks dull, greyish, or has dark, sunken spots, it is past its prime. Check for any mould or iridescent slime.
Texture: Press the flesh lightly; it should spring back and be firm. If it is mushy, sticky, or separates easily into shreds, discard it.
Packaging: If the vacuum seal is broken, or there is excessive freezer burn (white, dry, leathery patches), quality is compromised even if not dangerous.

Fish balls and fish cakes – the high fat content adds flavour and richness. For a bouncy texture, combine with a leaner fish (e.g., cod) and add starch (potato or cornstarch) and egg white.
Thai fish cakes (Thod Man Pla) – frozen chub mackerel is commonly used; simply mince the thawed fillets, mix with red curry paste, kaffir lime leaves, and green beans, then deep‑fry.
Canned fish spreads – the flaked meat is perfect for sandwich spreads.
